Ways To Use Leftovers

If you’re wondering how to use leftovers to avoid wasting food, try this 3-in-1 healthy meal planning. They’re meals made from leftovers.

My clients often state that the primary reason they don’t eat better is that they don’t have time to cook every day. If you struggle with finding time to cook, this 3-in-1 meal planning system may be just the trick! The basic idea is that you cook once and then use whatever you made for two (different) subsequent meals. For example, prepare grass-fed beef tenderloin for dinner one night, and then use the leftovers for sandwiches and soup on subsequent days. Here are some more examples of the best ways to use leftovers, using chicken and salmon:

3-in-1 Chicken

Day 1: Roast a chicken (rosemary with vegetables is my personal favorite).

  • Day 2: Use the leftover chicken to make a Mexican enchilada by wrapping it up with some sautéed onions, melted cheese, sour cream, and lettuce/tomato. This takes less than five minutes to make.
  • Day 3: Pull the remaining chicken off the bones and sprinkle it in a mixed green salad.

3-in-1 Salmon

  • Day 1: Bake a big piece of wild-caught salmon (you can use the Honey Dijon Salmon recipe in Chapter 15 of Beating Sugar Addiction For Dummies).
  • Day 2: Make salmon cakes! (You can find a gazillion recipes on the Internet.)
  • Day 3: Make salmon stir-fry by adding the remaining salmon to fresh veggies and wild rice in your favorite sugar-free sauce. Your vegetable chopping time is only a minute or two, and the cooking time is only six minutes.
